- 1 lb cabbage, in slivers
 - ½ lime lime juice
 - 2 tsps fish sauce
 - 3 tbsps shallot oil
 - 1 plum tomato, deseeded and sliced into slivers
 - 2 tbsps pickled ginger
 - 3 tbsps fried shallots
 - 1 tbsp toasted sesame seeds
 - ½ cup peanuts, crushed

Salt and thoroughly toss cabbage, then let rest for at least a half hour (overnight is okay). Squeeze out the resulting liquid. Throw together everything else except the shallots and toss, then top with shallots.   |
