  • ¼ cup oil
  • 6 ounces onion, in fine half rings
  • 3 cloves garlic, minced
  • 1 tablespoon curry powder
  • 18 oz. tuna in oil
  • 3 whole green chiles, cut to fine rounds
  • 1 ½ inch ginger root, julienned
  • cups fresh cilantro, chopped
  • salt, to taste
  • black pepper, to taste

directions

Put the oil in a nonstick frying pan and set over medium-high heat. When the oil is hot, put in the onion and garlic. Stir and fry until the onion turns brown at the edges. Put in the curry powder. Stir once or twice. Put in the tuna. Stir it around and break up any big lumps. Turn the heat to low. Add the green chili(es), ginger, and cilantro. Stir to mix. Check for salt, adding if needed. Add a generous amount of black pepper. Mix well and remove from the heat. Serve hot, at room temerature, or cold.
